Salsa is love

Today has been busy busy busy. A nice little Saturday if you will, except replace Bed Bath and Beyond with vintage shopping and Whole Foods. As I almost always find, the food was easier than the clothes.

As for literacy, I read a recipe for corn and black bean salsa, and then modified it because I read it after I tried to remember it from scratch at the store. I forgot an onion so feel free to add that in if you like that sort of thing. Apologies for the lack of formatting on what follows but... It's Saturday night so I can't be bothered to sit at a computer.

The recipe:

- 2 cans fire roasted tomatoes (Trader Joe's brand. You can also sub real tomatoes and green chiles if you enjoy chopping.)
- 1 red pepper
- 1 can black beans
- 1 can sweet corn
- cilantro, to taste
- squeeze of lime

I prefer a chunkier salsa but you can definitely play with the ratio of everything to make it your own. Also, the T. Joe's tomatoes are a bit spicy so if you're a pansy you should perhaps buy the regular version.

It's super easy- I should mention that this yields quite a bit but it's easy to freeze- or perfect to share!
